At Olives Olives, we believe that nature shouldn't be rushed. Based in the cool climate of the Macedon Ranges, we specialize in the Sicilian method of natural fermentation. While commercial olives are often treated with caustic soda to speed up the process, our olives sit in a natural salt brine for up to 12 months. This patient approach results in a superior texture and a complex, fruity flavor that you simply won't find in supermarket aisles.
We produce a variety of seasonal table olives. Whether it’s the buttery flesh of our Manzanillo or the robust depth of our Kalamatas, every olive is hand-picked and sorted to ensure only the best make it into our jars.
Our signature Pure Olive Paste (The Tapenade Alternative) is a cult favorite. Unlike a traditional tapenade which contains capers and anchovies, our paste is 100% crushed olives. It is the purest expression of our grove—bold, salty, and incredibly versatile. Use it as a base for dressings, a crust for roasted meats, or simply spread it on sourdough.

Experience the difference of slow-fermented, artisanal olives. At Olives Olives, we use the traditional Sicilian method—no harsh chemicals, no caustic soda, just salt, water, and 12 months of patience. Our olives are harvested at two stages of ripeness. Green ripe and fully black ripe. Processing is carried out in 220L barrels in a 10% brine (salt) solution. There is absolutely no use of harsh chemicals like lye (caustic soda) to artificially speed up the de-bittering process. The olives stay in this brine solution for ‘at least’ 12 months. They are regularly tested to monitor brine (salt) and Ph levels to ensure food safety standards are maintained. We then bottle with the mature brine (filtered 3 times) used as packing in 210g, 320g bottles and 1Kg bulk bags.
Most commercial tapenades are filled with capers, anchovies, and preservatives that mask the true flavor of the fruit. At , we do things differently. Our Pure Olive Paste is exactly what it sounds like: 100% naturally brined olives, crushed into a rich, versatile spread.
